Cosabella Pasta Recipe

Cosabella Pasta Recipe:

Ingredients:

  • 2 Cups flour
  • Generous pinch of salt
  • 3 Eggs, lightly beaten
  • 30 ML extra virgin olive oil
  • Extra flour, for dusting

Tools:

  • Kitchen Aid Mixer
  • Pasta attachments
  • Cutting boards
  • Medium size pot
  • Small bowl
  • Colander
  • Pasta Ladle

Instructions:

Place flour, salt and eggs into the mixing bowl. Combine ingredients in the bowl with the speed at about 2-3 and mix. Remove dough from the kitchen aid and replace the mixer with the dough hook then knead the dough for 4 minutes in speed 1. Cover Dough and let rest for 30 minutes.

On a flat surface sprinkle flour and dust your hands. Knead the dough for about 50 seconds and cut into 4-5 pieces.

Attach the flat roller attachment. Repeat running the dough through 4 times.

Remove roller and attach cutter of your choice. Run the pasta dough through the cutter and place on the resting rack Cook Pasta immediately or freeze.

To cook heat large pot of water add a generous amount of salt and cook for 2-4 minutes. Keep a cup of the pasta water and add it to your favorite sauce.

*I learned the red sauce recipe from Francis Ford Coppola when he was a house guest of ours. It is a simple red sauce using CENTO tomatoes. I have now added a few touches for my personal taste. You can find CENTO San Marzano Tomatoes in Oklahoma City at Wal-Mart, Whole Foods, Homeland, and Culinary Kitchen on occasion. The Red Sauce is a simple marinara and can be used as a base for other marinara sauces that include vegetables or meat products! It works great on your pasta of choice, especially with take home pasta from your Cosabella Cooking Class.

3 tbsp imported extra virgin olive oil
1 tsp of fresh chopped garlic
1 tsp nutmeg
1 can CENTO Certified San Marzano Tomatoes, crushed
1 can whole CENTO Certified San Marzano Tomatoes
Pinch of red pepper flakes
Sea salt to taste
Fine black pepper to taste
1/4 cup chopped basil leaves
Whole basil leaves and Parmesan for taste and garnish
